Executive Chef Adrien Brunet, in charge of the kitchens since 2021, draws his inspiration from the land and the seasons and expresses a desire to favor short circuits to offer a more local experience that respects biodiversity.
The two restaurants of Crillon le Brave have been awarded the 1 Ecotable label, a testimony to a well-advanced ecological approach that promotes sustainable catering.
Écotable is a company whose mission is to accompany the actors of the restaurant sector in their ecological transition. It is the first sustainable restaurant label that promotes establishments and allows everyone to choose their restaurant based on ecological criteria. The label identifies eco-responsible restaurants throughout France and, following a meticulous audit, awards one, two or three Ecotable macarons depending on the establishments' approach.
Both restaurants from Crillon le Brave, now awarded the 1 Ecotable label, guarantee recipes that are 100% prepared on sire from raw and fresh products, strict respect of the seasons for fruits and vegetables grown in France, systematic selective sorting as well as service in reusable dishes. Egg products from caged hens are banned. The two restaurants of the hotel are committed to communicating their approach to both customers and staff in a spirit of transparency and sharing.
