La Table du Ventoux

In the heart of Provence, La Table du Ventoux and its terrace offer the best of this beautiful region.

Chef Thomas Lesage puts Provence centre stage in his cooking. Based on the best local and seasonal produce, he paints his vision of bistronomic cuisine, rich in colour and nuance.

‘The essence of a recipe is not to transform the product, but to accompany it, to sublimate it in what is most noble: its original taste'

Thomas instils this philosophy in every member of his team, so that together they can develop a common approach.

A gourmet getaway

Terrasse La Table du Ventoux Hotel Crillon le Brave @morecontentstudio

La Table du Ventoux and its panoramic terrace offer tasty, light cuisine at lunchtime, in keeping with the region's sense that life is good.

An address not to be missed! On the menu: sharing dishes with a Provencal flavour, from midday to 3pm, non-stop. As the seasons change and new dishes arrive, you can rediscover a new Provence in each dish on the menu. For a moment, you’ll get caught up in the breathtaking view of the surrounding countryside, the expansive vineyards and fields, until you forget all about time, just enjoying the moment to the fullest. It’s a way of encouraging families and friends to stay longer at the table, in a peaceful atmosphere somewhere between a ‘Sunday lunch’ and a ‘holiday meal’, where late risers are also welcome.

For dinner, Chef Thomas Lesage reinvents his bistronomic menu. Creative and contemporary, it draws on the best of the South of France - from the Vaucluse lands to the Mediterranean basin.

Throughout the year, local and seasonal products are given pride of place, such as fresh vegetables from the market, poultry from Mazan, rice from the Camargue, goat’s cheese from the Ventoux and strawberries from Carpentras. As for the barbecues and planchas, they give pride of place to lamb from the Alpilles and pork from Ventoux. The beating heart of the hotel, La Table du Ventoux is a place where every guest and connoisseur of the region can enjoy a moment of sharing. This commitment to promoting local products has been recognized, as La Table du Ventoux has earned two Écotable macarons, which certify the reduction of environmental impacts.

The Chef

From an early age, Thomas Lesage was immersed in a culinary environment, growing up in the family hotel-restaurant in Brittany where he quickly learned to cook to help his parents. His cuisine is inspired by the joys of family gatherings around the table and his passion for nature. Chef Thomas Lesage also draws his inspiration from the diverse culinary cultures he has discovered on his travels, particularly in Latin America. His cuisine is conceived as a tribute to the richness of the cultures he has explored, making each dish an authentic and creative expression of local treasures. At the Hotel Crillon le Brave, you only have to look around for inspiration. For him, this exceptional location offers the perfect balance between high standards and freedom to experiment.

The song of the cicadas and the sound of the church bell punctuate the days and evenings.

From breakfast to dinner, you’ll rediscover this majestic setting that seems to have come straight out of Paul Cézanne’s brush, lit up by the first rays of the sun in the morning and by the glowing colours of the late afternoon.
