Crillon le Brave obtained this year the Ecotable label sign of a confirmed eco-responsible approach.

La Madeleine
Gastronomic Restaurant

Inspired by the richness of the terroir of Provence, Chef Adrien Brunet carefully selects products sourced from the best producers in Provence. Alongside his team, he deeply immersed himself in the destination and pushed the symbol of the madeleine throughout his dishes, like a gourmet wink. Chef Adrien Brunet illustrates perfect technical virtuosity, combined with a refined simplicity.

Take advantage of the spectacular view from our gourmet restaurant’s terrace and taste the flavours of Provence, which was rewarded with a Plate in the Michelin Guide in 2021.

At dinner, Adrien Brunet expresses emotion through his cuisine, providing a perfect balance of textures and flavours. Our Chef will share a unique experience whereby you discover his favourite dishes in four stages at the gastronomic restaurant La Madeleine.

La Table du Ventoux

Adrien Brunet always puts Provence in the spotlight, this time in a bistro-style setting, with dishes based on the best of Vaucluse produce.

Thus, the Melon de Cavaillon cut like a flower is accompanied by a Muscat de Beaumes de Venise jelly, perfect for enjoying a meal together while admiring the view from the terrace. The journey into authentic Provence continues with classic dishes refreshed by the Chef's inspiration: Tian of vegetables, a trio of tapenades, roasted octopus tentacles, or reimagined pissaladière. The chef handpicks the fresh, aromatic herbs from the garden above the swimming pool. Daily suggestions enrich the menu by drawing inspiration from local produce.

The Chef : Adrien Brunet

Adrien Brunet is the Chef of Crillon le Brave: the gastronomic restaurant La Madeleine and the bistro-style, La Table du Ventoux. A former disciple of Meilleur Ouvrier de France Jean Luc Rocha, he claims an authentic cuisine, based on local and seasonal products to reveal his passion through sophisticated, gourmet and generous dishes.

His great technical mastery and his creativity showcase the finest local products sourced from the best craftsmen in the region: Melon de Cavaillon, Muscat from Beaumes de Venise, or even Asparagus from Mazan. He loves moments of conviviality and conversations with his guests sharing his passion for the profession.



On the ground floor of the Maison Roche, the oldest house in the hotel, the Bar is the perfect place to relax in a calm and intimate atmosphere, while enjoying a cigar or pastis, a typical tradition of Provence. With its new decor that is both cosy and elegant, the entirely vaulted space has been recently renovated for even more comfort.

On a fine evening, watch the setting sun from our panoramic terrace and let yourself be carried away by the mildness of the early evening in the Vaucluse.

For breakfast, a sumptuous Provençal buffet is served every morning at La Table du Ventoux. Comfortably installed under the large glass roof or on the panoramic terrace, watch the first rays of the sun illuminate the majestic Mont Ventoux and the surrounding countryside. Listen to the song of the cicadas and the church bell which will commence your day. Quietly, enjoy the smell of hot coffee, while savouring homemade pastries and freshly baked breads (the Nyons olive bread is already a classic), fresh fruits of all colours, gluten-free and lactose-free specialities...

Breakfast is served from 7:30 a.m. to 10:30 a.m.


Reservations are strongly recommended for guests staying at the hotel. We also welcome non-resident guests upon reservation and subject to availability.

On Sundays, don't miss the convivial moment of the buffet brunch, an institution at Crillon le Brave. The opportunity to taste local products and elsewhere, thanks to our generous menu which is full of sweet and savoury delicacies with many dishes to share: focaccia, marinated meats and fish grilled on the outdoor plancha, fresh salads, regional cheeses , dessert buffet…
