At Crillon le Brave, you can savour traditional Provençal cuisine in two unique settings, all thanks to the astounding talent of young chef Anissa Boulesteix. Enjoy a gourmet meal at La Madeleine or sit down for a casual dining experience at bistronomic restaurant La Table du Ventoux.

Whatever the dish, for Anissa, culinary excellence always starts with exceptional produce. Fresh flavours and vibrant colours play the starring role in her nutritious, delicate and flavoursome dishes. Only using healthy, natural and seasonal ingredients, Anissa succeeds in magnify flavours without adding anything artificial, creating generous dishes to enjoy amongst friends and family.

Cavaillon melons, Carpentras strawberries, Provencal lamb, Ventoux truffles… not to mention all the delicious fresh vegetables that you’ll see lining the stalls at Provence’s colourful markets! Inspired by the wealth of Provence’s local terroir, Anissa Boulesteix carefully selects products sourced from the region’s very best farmers. The identity and values of La Madeleine are deeply engrained in Anissa’s cuisine: supported by a skilled team, she takes great pleasure in making full use of the symbol of the madeleine as a nod to the establishment throughout her culinary creations. For example, her already iconic “Nid de Poule” (Hen’s Nest) starter is accompanied by three butters flavoured with garlic, Espelette peppers and fleur de sel, all moulded in the shape of madeleines. Anissa’s many emblematic dishes, including “Red Mullet with Razor Clams and Wild Garlic” and “Risotto with Asparagus and Samphire”, illustrate her virtuosic technique, married with her undeniably refined and asserted taste for simplicity.

La Table du Ventoux

At La Table du Ventoux, Anissa Boulesteix serves up another fine celebration of Provencal terroir, this time through bistronomic cuisine: the very best local produce enjoyed within a relaxed, friendly setting.

The sardines with piquillo pepper, the ceviche, or the pissaladière served on a wooden board are all perfect for sharing with friends whilst admiring the view from the terrace. The journey through authentic Provence continues with a selection of classic dishes reinterpreted with Anissa’s own refreshing twist: reworked bouillabaisse, sea bream with pea purée, vegetable linguine and vegetarian risotto.

And the herbes de Provence, the pièce de resistance of each dish, are hand-picked from the herb garden just below the swimming pool: you can’t get fresher than that! Every day, the menu is enriched with new and exciting dishes, drawing inspiration from local products. Here in Provence, we are truly spoilt by nature!

Bar

On the ground floor of Maison Roche, the oldest house of the hotel, the Bar is the perfect place for relaxing in a calm and intimate atmosphere, for enjoying a Pastis, as dictated by Provençal tradition, or a cigar for connoisseurs. With its new cosy and elegant décor, the entirely vaulted area has recently been renovated for greater comfort.

Breakfast

For breakfast, a sumptuous Provençal buffet is served at La Table du Ventoux. Comfortably seated inside the large sun room or on the panoramic terrace, watch the first rays of sunshine illuminate the majestic Mont Ventoux and the surrounding countryside; listen to the cicadas singing and the church bell ringing, which will set the rhythm for your days; delight in the scent of hot coffee and home-made pastries...

Don’t miss the delicious spread laid out for brunch every Sunday: it’s an institution at Crillon le Brave. Come and indulge in the generous selection of products from the local area and beyond. The menu offers something for everyone, with a range of sweet and savoury treats perfect for sharing amongst friends and family: tuck into the fougasse, marinated meats and fish grilled outside “à la plancha”, fresh salads, and regional cheeses and desserts.
