- 10:15 am: Interactive expert talk — Summer nutrition, digestion & the Mediterranean lifestyle
A focus on seasonal nutrition, including digestion, hydration, meal balance, and the impact of eating habits on overall well-being. A practical approach informed by the microbiome, sleep, and seasonal rhythms. - 12:15 pm: Culinary workshop — Part 1
Tomato in all its forms: sun-dried tomatoes, heirloom tomato & basil gazpacho, and tomato & basil ice cream - 1:30 pm: Lunch curated with the Chef, inspired by tomato and Mediterranean summer cuisine
- 2:45 pm: Culinary workshop — Part 2
Preparation of a tomato coulis, with discussions on preservation techniques and flavor pairings - 4:30 pm: Tasting of the creations, followed by discussions and a Q&A session

About Claire Borwin
A nutritionist, registered dietitian, teacher, and educator for more than 20 years, Claire Borwin has developed a holistic and intuitive approach to health that blends nutrition, neuroscience, the gut microbiome, and the art of living well.
Specializing in women’s health, she supports women through hormonal, digestive, and emotional challenges with an integrative approach combining nutrition, naturopathy, herbal medicine, and lifestyle practices.
Holding university diplomas in phytotherapy and aromatherapy, specializing in the intestinal microbiome, and currently pursuing advanced university studies at the Sorbonne focused on the microbiome and health, Claire explores the connections between nutrition, sleep, emotions, biological rhythms, and digestive wellness.
Passionate about bromatology, botany, and education, she offers a deeply vibrant, sensory, and science-based vision of food and nutrition.
Alongside her private practice, she regularly teaches and trains healthcare professionals in nutrition, the microbiome, and nutritional support.
Certified in chocology, she also explores the cultural, sensory, and emotional dimensions of food through an approach where gastronomy, pleasure, and wellness are in constant dialogue.
Through her retreats and workshops at Crillon le Brave, Claire Borwin creates immersive experiences that combine education, tasting experiences, living cuisine, and well-being in an environment designed to slow down, learn, and savor life differently.
