The Hotel’s gastronomic restaurant offers a refined cuisine, inspired by seasonal local products of Provence above all. Along with her team, Chef Anissa Boulesteix is deeply influenced by the establishment and has playfully gone all the way with the idea of the madeleine symbol, as a gastronomic nod. The already iconic “Nid de Poule” (hen’s nest) starter is accompanied by three butters flavoured with garlic, Espelette chillies and fleur de sel, all moulded in the shape of madeleines. Similarly, the signature dessert, “La Madeleine”, associates a madeleine sorbet in a meringue tube with a light coffee mousse. Among the emblematic dishes, the «Langoustines with sour razor clams», the «artichokes raviolis «, the «Lamb of Provence with a declination of fennel» or the «wild garlic Capon» illustrate a perfect technical virtuosity combined with an asserted attention to streamlined simplicity.
