From plate to glass, inspiration remains local with a premium selection from an exceptional terroir. As if by magic, renowned designations seem to converge around the hotel. Think Côtes du Rhône AOP Ventoux, Châteauneuf-du-Pape, Beaumes-de-Venise, Gigondas and Vacqueyras.
To enhance our appreciation of this outstanding winemaking heritage, the hotel organises Winemaker Dinners at Bistro in spring and autumn. The Chef and Sommelier join forces on a food-wine pairing menu in order to showcase a prestigious estate in the presence of the owner.

Domaine du Tix, Mormoiron
Marie Pirsch and Philippe Danel are good friends and great wine-makers. Native Parisians who fell in love with the region and its wines, their lovely domaine sits on the flank of the beautifully-named Colline de Notre-Dame des Anges and Tix is well-known for its white viognier, its classic syrah/Grenache red, and fresh rosés.
Château d’Unang, Malemort du Comtat
James and Joanna King are also relatively recent immigrés having left their native Scotland for warmer climes when they bought and restored the beautiful Château d’Unang. They gave new life to the château’s wine production in 2003 and their success in local and international markets is noticeable. Using low yields and evolving their entire production over to organic processes, the Kings are making their own mark in the re-named appellation that is Ventoux AOC.
Château Pesquié, Mormoiron
We have a special affection for Château Pesquié as its birth coincided with our own in 1989. Paul and Edith Chaudiére (with Edith’s parents M & Mme Bastide) created this marvellous domaine and were some of the first grape-growers to recognise the benefits of making their own wines, instead of doing this through the local cave coopérative. The original quartet have gradually passed the baton onwards to the next generation, brothers Frédéric and Alexandre, who have taken the wine and its renowned reputation to a wider global market of connaisseurs.
