Deliberately locavore, the concept for Bistrot centres around regional ingredients.The restaurant is housed in the former Maison Reboul with a terrace overlooking the Cour du Puits. Every season, the menu showcases the region's classics, selected from farmers' markets using a list of hand-picked addresses. Must-try offerings include Mazan poultry, Isle-sur-la-Sorgue trout, Ventoux pork, Provence lamb, Sault small spelt risotto, Mormoiron asparagus, Hôtel-Dieu market truffles from Carpentras, Jacquemin goats' cheese, heirloom tomatoes, pistou soup, home-made olive tapeade, strawberry tart and more. Most of the Herbes de Provence are grown in the herb garden just above the swimming pool. As fresh as they come!
Every season, the Chef puts his imagination to the test by creating a full menu and day menu using local produce. But, admittedly, nature has been generous in this region.
One special aspect of Bistrot is the opportunity to go down into the Reboul Wine Cellar and pick out your own bottle of wine for the evening.
Our local partners and suppliers... farmers, fishermen, vignerons and many more... are vital ingredients in this regional initiative.
The bistrot is open on Sundays and Mondays until October 13th 2018. From October 14th, 2018, the bistrot will be open every evening until November 3rd, 2018.
